Matt leads the team of Matt Douglas, and the double Bens (Newby & McCaskill) in an endeavour to constantly provide fabulous meals that simply showcase the best of seasonal produce...
Matt came to us from Pranzo, and he is now in our hearts but his memorable food is also now in the hearts (and bellies) of our regulars.
Matt Douglas
Matt Douglas has been cooking for twenty years...his childhood experience of global cuisine as one of two children travelling with parents in foreign affairs, combined with an adolescence spent in the Barossa, inspired a love of food wine, which is diverse and reflects an open mind.
Matt cites one of his influences as his mother - 'who always asked us to try everything on our plate' whether it was a grasshopper in thailand or a witchety grub in the territory...
Matt currently enjoys the company and industry repartee of his partner Camilla- who is a chef at Dragonfly...as well as skateboarding - and the company of his two well loved and rowdy canines.
Double Bens plus Tamara
The Double Bens are Ben Newby - the third of Claire's brothers to take on an apprenticeship at the Cat; and Ben McCaskill, who is reluctant to follow in the footsteps of his sister who is an acclaimed pastry chef...Benny Mac is currently our beloved kitchenhand whilst Ben Newby looks to Matt Standen & Matt Douglas, to teach him the way.
Tamara follows the lead of her mother Leanne who loves cooking and Tamara currently combines study with working part time in our kitchen.
Claire Graham

Having always worked in intimate restaurant environments, Claire Graham acquired her skills by simply making herself available to the kitchen when they needed a hand. Always passionate about food, she likes to challenge diners with unusual combinations of flavours, most of which can be found in ancient cuisines. Claire enjoys delving into traditional cookery for inspiration, particularly south east asian & french, and cites her influences as Liz Cinatl, Ben Sharp, Bernard Oehrli, Michael Newby and her fabulous tincat kitchen team.

Richard was with tincat for three years, leading the kitchen team from the inception of the new tincat in July 2000.
He and wife Kylie Berry now own Gillberries at Dulwich - in the old mortar & pestle - open every day except sundays 7.30am till 4pm - so when it's an earlier breakfast you want they are our best bet!
